I have not used this feature, but it looks like an option under the Note Input menu, Cross Staff Notes. Looks like it only works when you have two staves under the same instrument, like in piano or harp.

I believe what you are looking for is called an appoggiatura. You can find it as an option under the Keypad, Other Notes (2nd tab). This should insert the small notes - as many as you want. It's icon looks like a tiny eighth note and is next to the arrow.

V.S. is shorthand for "volti subito," which is a directive for the player to turn the page quickly. In the manual, it is discussed on page 690 under Auto Page Breaks. I think there you'll figure out how to remove this notation or to prevent it from occurring entirely.
