Is there anyway I can record a video of a score with audio like this with Sib 7.5?

Sure. With your score open, go to File/Export/video. You have no choice but to have the green playback line follow the music.

Thank you! Also, you can turn off the playback line in the export menu.

It worked. no line in my video. You must be confusing it for an older version.
