There is a plug-in (at least in Sibelius 2) that allows for proper playback of cresc./decresc. What you have to do is select the the measure(s) containing the note you want to fade in or out (say two tied whole notes over two measures)and go to plug-ins. In the playback section you will find one that says cresc./decresc. Click on it and a dialog box will open. Just enter the the numerical values for the volume you want (there is a little chart in the box giving you approximate numbers from ppp to fff. This will give you proper playback.
