Are you viewing vertical or horizontal spreads? In general, the former still has issues. Also, check in file-->preferences that you have unchecked the appropriate follow settings.

Unfortunately I am on holiday in Rome for the next fortnight and do not have access to sibelius. However if, as andy has said, it has been answered on the official forum by Robin and Jeremy, you can take their answer to the bank.

Be sure you are using the correct plugin. There is one that creates a new score, but there is another that copies the new notes to the clipboard so you can paste it.

You do know that you can assign the plugins to their own shortcuts?

I'd complain about this on the official Avid Sibelius forum. It has been a long standing issue with Sibelius that dynamics which play when started from the beginning don't play when starting part way through.

A lot depends on the order in which you do things. Set up the whole of one bar as shown add the trem line and hide the bracket, then make each into a dotted crotchet.
If you play it back now, you'll hear three quavers each beat.
