In Sibelius 8, the way to switch between regular notes and the larger "Cue Notes" is to highlight the measures or specific notes you want to affect, then open Inspector and in the General=>Visibility window you'll see a [ ] Cue-Sized check box. Just click it to change to cue-sized notes

Thank you very much for your response Andy, that's reassuring. I will add for anyone reading this later that I was just successful recording with the trial version without latency by using an external GM Soundmodule and setting that as the playback device.
