Ok, it's more than just G/B, I'm having problems inputing chord symbols on guitar tracks, I don't know quite what the glitch is, but Sib is shutting down periodically when I'm putting chords on guitar tracks.

Sibelius crashes when this happens, anyone else experiencing this?

Try Apple+K and typing in G/B.

I don't want to use VST's with Sib 6, but it's always scanning on startup, takes a few minutes. Anyway to point Sibelius to either an empty folder or just cancel the process altogether?

Sometimes when you go to the part view, the title is actually "above" the part, so see if you can drag it down a tiny bit. If not, print a .pdf file of the part and see how it turns out.

A lot of the time I've found that even with magnetic layout on, sometimes the title appears off the page.

Sibelius 6 will be the last version I purchase, I'm even hesitant to upgrade to Protools 9, I hate corporations buying out small companies.

Sounds played depend on your sound card or if you are using a VST plugin. I don't know Finale but it may come pre-loaded with a full set of drum sounds. Sibelius comes with BASIC sounds, and that's a taste, they want you to buy the full set. Look into a cheap or free MIDI sound set, there are plenty...

Yeah, just Press I and you can click on the staff on the right hand side, and select "Move Up" or "Move Down". That's the temporary solution.

I am using GPO with Sibelius 5.2 and I setup GPO in the order of the score, i.e. Flutes on Ch. 1, Oboe Ch. 2 Clarinet Ch. 3 etc. Now in the mixer view, it seems to automatically set the channels for the instruments, but they are way incorrect. I don't know what you mean, press T to open up the Time signature window, click on a time signature and place it where you want it. Try it with the same time signature that is already in place, I'm not sure it will print it again, but worth a shot.
