Add bar at End does what it says it will - adds a bar to the end of the entire piece you're scoring. You should be able to add that one bar using Add Single Bar, but if that's not working, then refer to the replies about non compatibility. If you have an older version of Sibelius, it won't run on a later Mac O/S. The symptoms you describe are typical of this. Yes, it should be there! Are you actually running Ultimate? Quite a few people think they have Ultimate, as there's only one download, but have only activated First.

Use a non-magnetic slur. Press S on the keyboard without selecting a note. Click it into clear space then move it into position. You could perhaps do this just once then copy and paste further examples.

I've never found such a feature. So we're back to the old school way of doing things. Ctrl-S (Cmd-S for you) before you make any major changes, Ctrl-S frequently, and if you're going to 'experiment' with a score, then work on a copy. It might help to know exactly what version of Sibelius you're using, rather than just 'ultimate', and the version of the Mac O/S you're running. Older versions of Sibelius aren't compatible with later Mac O/S, throwing up all sorts of odd issues.
