If you can see the usual Sibelius background you might be looking 'off the page' as it were. Try Ctrl+Home (or Mac equivalent) to see if that brings the score back into view.

One way is to add the extra staves (first save the original score under a different name in case of accidents), then use the Explode plug-in (NOT the 'Arrange' Explode).

No sensible way I know of. Your example shows two parts, so you can either write them with one stem in one voice or with two stems, using two voices.

Is there some problem with doing it the way I described?

It is possible that the page-breaks from Finale are interfering with the layout.

One thing you can try is Layout > Format > Unlock Format, and that would allow Sibelius to flow the music in its own way.

Is it possible to go from piano stave to single stave in the one part ? Yes. If you can make the change on page or system boundaries, then select the stave you don't want and use Layout > Hide Empty Staves to make them vanish.
