You can't change MIDI channels mid-way along the same staff in Sibelius, except by using an instrument change.

While you're inputting one bit of fingering text, hitting Space should move to the next rhythmic position, but not when you only have a bit of fingering text selected (i.e. coloured blue).

Switch off 'Use same slot for all staves of keyboard instruments' on the Playback page of Preferences to allow independent control of each staff via the Mixer.

You can't currently set the position of an object in the part to be its position in the score. Sibelius's workflow assumes that you work on the score first and then tidy up the parts.

I'm afraid you can't change the way that keyboard input works in G7 to make it more like Finale's Simple Entry tool.

I suggest you work your way through the tutorial at the beginning of your G7 User Guide to learn how to use G7's input method a bit more comfortably.

Open the Parts window (via Window > Parts), then click the 'New Part' button. You can then add both of your reed staves to the same part.
