Help with writing choral responses

I'm writing a set of responses for Anglican evensong, using Sibelius 4 on a PC, and have come back to them some months after starting.

Although I've now finished the composition, I can't remember how I did the formatting earlier, and have posted a screenshot and a couple of questions here:

PS I've now solved, thanks to a friend, the problem of formatting the dynamics - by holding down CTRL whilst typing in the dynamic.

Key signature: Select the first bar of a new section. In the Bars pane of the Properties Window set Gap before bar to a value other than 0.
