Like by the Mac, switching output between speakers and headphones should be automatic, simply plugging-in the headset jack.
Please, relief us from going to "Play" tab -> "Playback configuration" -> "Audio engine options" and then (finally !) choice the interface.

Erm, no, it shouldn't. You can't just change drivers on the fly like that. Just make sure all your sound devices are plugged in when sib starts and make sure USB devices don't get switched into sleep mode.
