Is there an easy way to create slurs over grace notes or starting on a grace note, and ending on a regular note? I can't seem to figure it out, so I've been manually dragging the slurs into place, which obviously takes much longer.

Grace note slurs should elide with slurs. So the grace note gets its own small slur to the main note as usual and then start the main slur on the main note, not the grace note.
So if you want something non-standard, you'll have to do it all manually.
