How do I make notes across at least three staves of different instruments?

You'll have to explain exactly what you want to do, perhaps adding an image.

The first example's easy. Just extend the length of the stems.

I think you're going to have to fake the second example. Sib can do cross staff beaming between two staves (explained fully in the Reference, so read through that a couple of times) but I've never seen it done over three staves. It might work, try it.

Faking would involve hiding noteheads, beams and stems. Never tried it, as I've not needed to!

That seems more difficult, since I want the beam to be an accelerando beam

I've explained accelerando beams a few posts down from here! It should be possible to create the beams with all the notes in one staff, then hide the un-needed stems and noteheads, finally entering the required notes and extending their stems.

At least I think so - I've never tried anything that unusual.

You can do the second example by entering all the notes onto the middle stave, then crossing them as desired to the stave above or the stave below as explained in the manual.

Hi, I wanted also to write something about this Cross Staff Beaming issue.
Take this example:
Image
It's not possible in Sibelius to move an individual note from a chord to a lower or upper staff, it just moves the entire chord. The "solution" is more like a "work around" extending the note beams. This takes a lot of time, unfortunately.
It would be very nice if Sibelius would move the notes above or below individually, exactly as Finale does.
I believe this is an issue.
Greetings!
