I waht to create an ... "expression" which is shown in every voice, but it shall be shown just one times in the hole score.

Like this "Stürmisch. Schnell und sehr heftig" at the beginning.

I just dont know how Sibelius names this?

Use a system text style such a plain system text. It will appear in the score according to your settings for system object positions and in all the parts.
