I am writing a score where the violins are alternating between 5/8 and 7/8 and I'd like the basses to be written in 6/4. How would one do this?

Write it in 12/8 or 6/4 (I think 12/8 might prove less tedious)
Where you need the complex time sigs, use Time signature (one line only). Use fake barlines (from the lines menu) where needed. You'll also need to drag notes around to make room.

After finishing change the ts to 6/4 without re-writing.
