Is there any way to get the german/scandinavian note names when adding note names, so that I can get H instead of B?

If you want to add note names to the noteheads with the Add note names function I don' think you can do this easily. It uses the Opus Note Names Std font which (as far as I can tell) doesn't even have the H notehead. Changing languages (e.g. to German) makes no difference. If you have a font editor or can install an alternative font that may work, but that's beyond my knowledge.

Otherwise there is an Add Note Names plugin that adds the note names as a text line above or below the staves, and here you can choose note names used in German or other languages. In Sibelius 7.5 it's in the plugins in the Text section. May not be quite what you want of course.
