What would be the correct notation in this situation?
Here I have a scale running from the bass clef region to the treble clef region. I want to show that this is a continuous legato melody. I tried putting the notes on different staves, but then I can't think of how a slur would be notated. Can I get some ideas here? Thanks -Mike

Although in earlier versions of sibelius it was easier to do cross staff slurs (I'm talking version 4/5/6) they can still be done, but it's a bit of a faff. This is one area, I think, where sibelius has actually gone backwards.

Even V7 will let you do a multi-arc slur. I've not gone beyond 7.1.3, as there's nothing essential for me in the later versions.
I'd suggest trying a non magnetic slur. Type S and click away from the notes, in white space. Then try manipulating the ends and arc of the slur with the handles. It can be done and the results can look quite acceptable with practice. But it is, as Mike said, faffy.

I moved the notes back to separate staves and attempted a slur across two staves. Let me know what you think. I also edited the notes a bit to make this more realistic on piano: the lower G is only sustained a beat and the high C is restruck.

Yes, that looks good. Once you've got the knack of doing them, such slurs can take little time.
Alas, I'm seeing more and more ugly 'default settings' slurs in printed music books. Some are very clearly 'out of the box' Sibelius, others look non-Sibelius. I haven't used Finale in so many years, I forget what its default output looks like.

FYI, your original image showed a dotted minim G and no second high C - not that it matters - the answer was found.
