Hmmm.. The Mixer in the Play menu has gotten weird. It's 3 times as big as it used to be, which is just a bit of a hassle. But my main complaint is that it now automatically applies panning to instruments, panning that I don't want. Anyway to turn this behavior off?

AFAICT, the nmixer has not really changed since Sib 7. It has always assigned MIDI channels automatically and has always had set panning for instruments according to some formula originally worked out by the Finn brothers in the original Sibelius. Certainly, for conventional instruments, it has always followed orchestral seating conventions.
As to size, what are the settings you have in your OS control panel. Are you using a 4K monitor? Sibelius doesn't handle these kinds of displays well.
