How do I separate out the volume on staves in a piano piece with Mac/2020.6? Slot and Channel Sharing is not in my Preferences.
What do you mean by 'separate out'?
Much will depend on which tier of sibelius you are on (First, plain sibelius or ultimate).

I think I’m on Sibelius, not Ultimate or First.
What I want is to set different, independent volumes for the right hand and the left hand in the mixer. To do it now, I add a second piano instrument and remove the treble from one and the bass from the other, but then I lose some other things.

Create an instrument with a separate bass and treble clef stave and use the bracket (if you can) to join them together. (rt-click menu-->Other-->Bracket or Brace-->Bracket.
Put the RH music in the top staff and the LH music in the other. Give each staff it's own dynamics (even when they are the same). You may also have to untick (if you have it) the option shown in the image.

I only have accessibility, general, input devices, note input, and textures in my preferences menu.

Sibelius treats grand staff instruments as one instrument and plays its notes through one channel. To have separate control of dynamics on both staves independently you MUST have two channels. If you can't access this, then you are using one of the badly crippled versions of Sibelius or Sibelius|First.
