Greetings,
When I play a large score back as soon as it starts playing the view shifts so it's centered on the score, cutting the top staves from view. I've been through the preferences, view and playback menus and can't find where to turn this off.
A little guidance would be most welcome.

View Changes Upon Playback
There will be a setting somewhere to change the Zoom of the playback screen. I don't have your version of Sibelius so can't tell you exactly where. I'm sure one of the other two responders on this forum will know.
Noting that you show a 2020 version of Sibelius. Be aware that Apple's changes to their operating systems and 'pushed updates' will eventually cause problems (if this isn't already one of them). At some point you'll have to upgrade to the latest version of Sibelius - or by a Windows laptop/PC and dedicate it solely to your old version of Sibelius.
