In my score, I wrote a complex tuplet; 8:6, or eight eighth notes over a 3/4 bar. But after doing this, I can no longer write a simple tuplet later in the score. Every triplet with eight notes is now shown as "3:2". How do I get the triplets to look normal again?

When you create a new tuplet type with a ratio, it 'sticks' in the create tuplet shortcut. So, you have to create a normal triplet/tuplet and then the next one will be the same. It doesn't make that much sense to me, either!
