I would like to have the D.S. and Coda symbols larger. When I enlarge the type, it enlarges these symbols, but it enlarges the written "D.S. al coda," etc. as well.

It sounds as if you have used House Styles > Edit Text Styles to change the size. But you can change the text size for individual entries, without affecting the others, in the Text pane of the Properties Window.

How do you change the font style? I would like to use something a but more custom than what it offers. Any suggestions?

You might be able to do it in the Properties window, depending on which items you want to change. But you might get a better response if you posted this question in its own thread in the General Sibelius Discussion group.
Cheers...

For Del Seg and Coda signs I click on the appropriate barline IN THE SCORE then R/C >Text>Tempo, click again and you have blinking vertical line above the barline, R/C again and click on the DelSeg symbol which then appears quite small so you then select the symbol and open the Text tab at top of screen and change the size to 15. To add a Coda sign just copy and paste the DS at the Coda bar and select it then R/C and pick up the Coda symbol. By doing this as a 'Tempo' insert it will now appear in every extracted part, you don't have to put it in every extracted part separately. This works from the earliest versions of Sibelius.
I am using a PC with Windows 10 on a desktop and Sibelius 2020
